Mango and Coconut Chia Pudding
Just 3 ingredients, 5 minutes prep time and you’ve got a nutritious, delicious dessert that is 100% plant based, high in fibre and tastes just like a mango Weiss bar!
(Makes 6 servings)
2 x large, ripe mangoes
2/3 cup of coconut cream
1/4 cup of chia seeds
1. Place all ingredients in a blender or food processor and blend on high for approximately 2-3 minutes.
2. Pour into individual ramekins/dishes and refrigerate for approximately 2 hours. This can definitely be eaten immediately, but allowing it to chill in the refrigerator improves the texture as the chia seeds swell to create a pudding-like consistency.
This should last for at least 2-3 days in the refrigerator.
